Abstract

This study aimed to identify differences in ant-nest cake (kue sarang semut) based on color, texture, and taste, and to determine public preference and panelists’ acceptance of cakes made by substituting corn flour for wheat flour. The panel consisted of five trained assessors and thirty untrained assessors. Four samples were prepared: a control using 100% wheat flour (P101), a 30% corn-flour substitution (P121), a 60% substitution (P141), and a 90% substitution (P161). Organoleptic and hedonic (liking) tests were conducted, and the data were analyzed using one-way ANOVA and summarized in tables. Color scores did not differ across treatments; all samples received a mean of 3.00, classified as dark brown. Texture differed significantly between the control and substituted formulations (p = 0.013). In the hedonic test, the 30% substitution achieved the highest overall score of 3.41 (“very like”), indicating strong acceptance for color, texture, and taste. Overall, the corn-flour formulation, especially at 30%, performed comparably to the 100% wheat-flour control and was well accepted by consumers. These findings suggest that moderate corn-flour substitution can improve texture without altering the cake’s characteristic dark color notably. For product development, P121 is the most promising formulation for wider community acceptance and potential commercialization ahead. Keywords: ant-nest cake, wheat flour, corn flour, texture, taste
