Abstract

Abstract Cirebon is a small regency in West Java which is endowed with various tourism potentials in terms of modern as well as traditional events, products and services. Nasi Bogana, for instance, is a food offering presented at religious ceremonies at the Keraton Kacirebonan or Kacirebonan Palace, with the original recipe passed down from generation to another. To keep the existence of Nasi Bogana at Keraton Kacirebonan, it is essential to not only maintain the shape and taste, but also to keep adjustments in terms of taste, color, portion and size. At present, visitors can taste it at 'Pawon Bogana' Restaurant and enjoy the atmosphere of the palace at night. The cozy place also raises awareness of the existence of Kacirebonan palace as a cultural heritage. The study aims to identify the criteria of Nasi Bogana as a food heritage. Besides, it also tries to explore innovation in the process of preparing, and serving Nasi Bogana. Besides, the study also intends to observe the differences of Nasi Bogana made using hereditary recipes from Keraton Kacirebonan compared with what is sold in the community. This study also seeks clarification of the existence of Nasi Bogana as food heritage with the fourteen criteria of, also innovations of Nasi Bogana is explained using five indicators of innovation. The method in this study is qualitative approach. The main research instruments are interviews, observations and documentation. Interviews were conducted with four respondents or informans, they are Prince of Keraton Kacirebonan, Prince Abdul Ghani Natadiningrat; Princess of Keraton Kacirebonan, Ratu Ayu Muthoyyaroh Beda Sastrawijaya (Queen Mother); Mrs. Sonia H. Padmawinata, and Mrs. Askadi Sugra Suganda (Cooking Team from Gunung Jati Village). The result of this research is that Nasi Bogana is a heritage food with a number of criteria; it not only has traditional value but also historical value which is deeply rooted in Keraton Kacirebonan palace and has been passed from generation to generation. In addition, Nasi Bogana shows its authentic flavor showing its originality of traditional culinary of Cirebon which is different from other places. Therefore, this traditional menu has been through several innovations in order to be more commonly received by the public.
